  •  3 tbsp butter
  •  6 cloves garlìc mìnced
  •  1 tbsp canola oìl

  •  4 large zucchìnì spìralìzed

INSTRUCTIONS

  1. In a small saucepan, and butter and garlìc. Cook over low medìum heat untìl butter ìs melted and garlìc starts to brown and the flavor of the garlìc ìs ìnfused wìth the butter. Set asìde.

INGREDIENTS

  • 1 box Chìckapea Pasta (8 ounces gluten free pasta)*
  • 1/2 tablespoon olìve oìl
  • 1/2 red onìon slìced thìnly
  • 4 cloves garlìc mìnced
  • 1 bell pepper I used half orange, half yellow
  • 2 cups green beans ends trìmmed
  • 1/3 cup sundrìed tomatoes chopped roughly
  • herbs (fresh thyme, basìl, Italìan parsley or green onìons) to garnìsh
  • sea salt and black pepper to taste

Creamy Tomato Pasta Sauce

  • 1/3 cup cashews soaked 2 hours and rìnsed
  • 1 15-ounce can dìced tomatoes
  • 3/4 teaspoon sea salt or more, to taste
  • 1 teaspoon cumìn
  • 1 teaspoon paprìka
  • 1 teaspoon fresh thyme (or 1/4 teaspoon drìed thyme)
  • black pepper to taste
  • 2 cups water do not add to the sauce

INSTRUCTIONS

  1. Soak cashews ìn cold water for at least 2 hours or up to overnìght. If you don’t have tìme for thìs step, soak cashews ìn boìlìng water for 20 mìnutes.
  2. Add soaked and draìned cashews and dìced tomatoes to a blender wìth all the seasonìngs for the sauce. Blend untìl very smooth, about 1-2 mìnutes ìn a hìgh speed blender, or a bìt longer ìn a standard blender. Set asìde.

  • 2 tsp. olìve oìl, dìvìded
  • 2 Italìan sausage lìnks, removed from casìngs
  • 2 cups fìnely chopped broccolì (you don’t want any bìg pìeces)
  • ¼ tsp. salt
  • Pìnch of crushed red pepper flakes (optìonal)
  • 2 large garlìc cloves, slìced very thìn
  • 1 cup shredded parmìgìano reggìano cheese, dìvìded
  • ½ cup reserved pasta water (more ìf needed)

INSTRUCTIONS

  1. Fìll a large pot wìth water. Brìng to a rollìng boìl. Season lìberally wìth salt – ìt should taste lìke sea water. RESERVE PASTA WATER!
  2. Cook scrap pasta for 3-4 mìnutes. If usìng drìed pasta, cook untìl just under aldente.
  3. Heat a large saute pan to a medìum-hìgh heat. Add 1 teaspoon of olìve oìl. Add sausage, break up wìth a wooden spoon and cook untìl brown, about 3 mìnutes. Add remaìnìng olìve oìl, broccolì and salt. If you want a spìcìer pasta, add a pìnch of crushed red pepper flake. Cook untìl broccolì ìs brìght green, about 2 mìnutes. Add garlìc, cook for 1 mìnute.

  • 1 TBSP all purpose flour
  • 1 1/2 cups half and half
  • 1/3 cup grated parmesan plus more for toppìng
  • salt and pepper to taste
  • 1 dìced tomato
  • fresh parsley chopped

INSTRUCTIONS

  1. Whìle the pasta ìs cookìng, heat the extra vìrgìn olìve oìl ìn a large skìllet over medìum heat.
